1 lb. ground chicken (can also use ground turkey, grass-fed beef, veal or lamb)
4-5 finely chopped organic baby bella, shiitake or white mushrooms
1/4 cup cooked, mashed lentils or any pureed bean you like
Cumin, sea salt, freshly ground black pepper, fennel or whatever seasonings you like
Combine all ingredients—form into 4 good sized patties and either cook in non-stick pan sprayed with a little spray oil or on an oiled grill or under broiler until completely cooked through.
Can also add in grated raw organic zucchini or carrots, finely chopped onions, red bell pepper or shallots or about 1/4 cup thawed, organic chopped spinach that has been squeeze dry of excess liquid.
*I boil a cup or two of lentils, drain and puree - I freeze them for about 30 minutes in ice cube trays and then pop them out and keep in a ziplock in the freezer. Then when I want some for burgers, smoothies (one in a smoothie just makes it creamier), or soups, they defrost in no time! You can also just use canned beans (cannelini, kidney, garbanzo, black), puree them and freeze the same way. They add fiber.
I have also found ground chicken raised without hormones and antibiotics at my local Price Chopper - Central Market brand. Knowing they are healthier is enough but the taste and texture are noticeably better as well.
