This is the simplest way to make the most perfect hardboiled eggs and I've tried all different ways. Put cold eggs into a pot of cold water to cover. Bring just to the boiling point - when bubbles begin to break the surface of the water. On my stove it takes about 12 minutes. Cover and remove from heat. Let sit this way for 7 minutes.
After 7 minutes drain the water out of the pot and gently bang the eggs around in the pot so the shells crack. Immediately immerse in cold water and let them sit in the cold water for 2 or 3 minutes. Then peel and either eat and enjoy or refrigerate! They are perfectly cooked, no green ring around the yolk and the "skin" under the shell slides off easily!
