 1 cup natural, organic nut butter (almond, peanut or cashew butter) 2/3 cup Erythritol - you can use raw, natural sugar or sucanat; or Lakanto, natural calorie free sweetener, if you don't have Erythritol 2 eggs                                                                                                                                1 tsp. vanilla extract                                                                                                            1 packet of Better Stevia Optional: dark mini chocolate chips Combine first 5 ingredients in a bowl and stir until thoroughly combined. Stir in chips if including. I use a small scoop which is about a generous tablespoon. Put the little balls on a cookie sheet lined with either parchment paper or a silicone mat. They don't spread much so you can get 15 out of this recipe all on a large baking sheet. Bake at 350 degrees for about 12 minutes or until lightly golden brown. Set baking mat on a cooling rack for about 5 minutes - then remove cookies directly to cooling rack and cool completely. They are delicious and I dare anyone to tell they are grain free!
