4 cups almond meal
1 tsp baking soda
½ tsp natural, unprocessed salt (sea, Himalayan Crystal or pink salt)
4 eggs
½ cup melted coconut oil (can use pasture butter if you don't have coconut oil)
¼ cup sour cream or coconut milk
2 teaspoons vanilla extract
1/2-3/4 cup Lakanto (natural, sugar free sweetener) or natural sweetener of your choice
Dark chocolate chopped into bite-sized pieces or dark chocolate chips
Preheat oven to 350 degrees. Line baking sheet with either silicone baking mat or parchment paper.
In large bowl whisk together almond meal, Lakanto* baking soda and salt.
In smaller bowl whisk eggs, melted coconut oil, sour cream or coconut milk, vanilla and sweetener if not using Lakanto and it is liquid like coconut nectar.
Drop by heaping tablespoon-fuls onto baking sheet and press down to about 1/2” thickness.
Bake 12-25 minutes (depending on your oven!) until lightly golden and edges slightly brown. Remove and cool completely on a rack.
