My daughter seems to have perfected this recipe she originally found on Pinterest - so I'm sharing her version which comes out perfectly cooked (not overcooked which ruins salmon) and just delicious.
Preheat a pan on medium heat.
Season your wild caught salmon with sea salt and pepper on both sides.
Heat 1 tablespoon of olive or coconut oil - just enough to coat the bottom of the pan.
Put your salmon filet in skin side up. Shake the pan a bit to be sure it didn't stick. Cover the pan and cook until the filet is white about halfway through (depending on thickness - 6-8 minutes).
Flip the filet, squeeze about 2 tablespoons of lemon juice over it. Cover the pan and turn the heat off. Let the fish continue cooking and steaming in the covered pan until cooked to medium (about 5-8 minutes).
