I always like to have a quick, tasty, healthy little snack or treat when my kids and grandchildren visit. These two recipes fit the bill!
CHOCOLATE CHIP PUMPKIN SPICE ENERGY BITES
Makes 24-36 balls
Ingredients
3 cups organic old fashioned oats
1 cup pumpkin puree
1 cup nut butter
1/2 cup organic maple syrup
1/2 cup chia seeds
1/2 cup dark chocolate chips
1 tsp cinnamon*
1/2 tsp nutmeg*
1/4 tsp cloves*
*Or 1-3/4 tsp. pumpkin pie spice
1/2 tbsp vanilla
1/4 tsp salt
Directions
Add all ingredients to a large bowl, mix well.
Form 1-inch balls and place on a baking sheet. Cover and freeze for one hour before eating!
Store in the fridge or freezer.
CHOCOLATE-ALMOND CHERRY CHIA BITES
Makes about 35 balls
Ingredients

1 ½ cup organic, old fashioned oats

½ cup almonds, roughly chopped

2 tablespoons unsweetened shredded coconut

1 tablespoon chia seeds

¼ cup 72% or higher dark chocolate, roughly chopped into small pieces

½ cup dried cherries, roughly chopped

1/3 cup honey or organic maple syrup

2/3 cup almond butter
Directions

In a large mixing bowl, combine the first six ingredients until well mixed.

Add honey or maple syrup and almond butter to bowl and mix until thoroughly combined.

Refrigerate mixture for about 10 minutes to make it easier work with.

Shape into one-inch rounded balls and place on a cookie sheet.

Serve immediately or refrigerate in an airtight container up to five days. You can also freeze and use as needed.
